In a bowl, mix the rolled oats with the spices and pumpkin seeds
Chop the pecan nuts and almonds and add them to the bowl
In a smaller bowl, mix the coconut oil, vanilla extract, pumpkin puree and maple syrup (or honey) and mix it all together
Add it to the bowl and mix it all together.
Preheat the oven for 5 minutes at maximum temperature
Spread the mixture over a baking sheet, place it in the oven and bake for 40 minutes at 180ºC (356ºF) or until the mixture is golden.
Make sure to stir the mixture every 10 or 15 minutes
