Vegan baked oatmeal porridge with banana

This healthy oatmeal porridge is a great alternative to the usual oatmeal porridge. It’s so easy to make and extremely delicious. The banana gives this recipe enough sweetness so that you don’t need any extra sweetener or sugar, and the texture you get by baking is just amazing.

The best part of this recipe is that you only need to mix all the ingredients in a heatproof bowl or a mould, place them in the oven and go on with your morning routine while breakfast is getting ready. Either you’re someone who usually has hectic mornings or you’re just lazy (like me), this recipe is a delicious and practical breakfast to make with a minimal effort.

Before we start with the recipe, just a couple of tips that might help you:

  • Use a ripe banana. The riper the banana, the sweeter the porridge will get.
  • Although the banana gives enough sweeteness to the recipe, if you want some extra sweeteness, you could use some stevia powder. Don’t use too much as stevia is a very potent sweetener.
  • I’m using oat milk for this recipe but you can use any milk of your preference.

So without further ado, let’s jump right into the important part, the recipe:

Ingredients (1 serving):

  • 1/3 cup of rolled oats
  • 1 banana
  • 1 tbsp of flax seeds
  • 1/2 cup of oat milk
  • Stevia powder (if needed)
  • Cinnamon

Instructions:

  1. Preheat the oven at maximum temperature for 5 minutes. Then set it at 180ºC (356°f).
  2. Grab a bowl and add ¾ of the banana and mash it
  3. Add the oats, cinnamon, and stevia powder and mix.
  4. Add the oat milk and mix again.
  5. Put it in the oven for 20 minutes at 180ºC (356°f).
  6. Slice the other 1/3 of the banana
  7. Take it out and place the banana slices
  8. Put it in the oven 10 minutes more.

Done! Now remove it from the oven and let it cool for a couple of minutes. You can decorate it with more fruits or peanut butter.
