Sugar free mini plum tarts

Try these sugar free mini plum tarts and enjoy their moist texture, infused with a mild coconut flavor and utterly delicious. This recipe has a low amount of carbs (only 2 tablespoons of oat flour per serving) and calories, but yet is very filling. The combination of the three types of flour together with the coconut milk give these mini tarts an irresistible touch, garnished with a generous amount of plum slices, a fruit that is packed with antioxidants and vitamins, apart from improving your digestion.

Despite not having any sugar, these mini plums are deliciously sweet, and the vanilla ads a nice flavor. You can eat them as an afternoon snack, as a breakfast or whenever you’re craving something sweet. They’re super easy to make and it requires no more than 9 ingredients and just a few steps. It doesn’t take more than 5 minutes to mix all the ingredients, pour them into a mold (or molds) and wait for the oven to hit perfection.

These mini tarts are great when made with plums but I actually tried them with apple as well and they were just as good, so feel free to experiment with the fruit of your choice.

How to make sugar free mini plum tarts

Note: for this recipe I used 2 smaller molds but you can also use a bigger mold for the whole batter and make it a single tart. I normally prepare a recipe for 1 or 2 servings but if you want a larger amounts, just double or triple the recipe.

Ingredients (2 servings):

  • 4 tbsp of oat flour
  • 2 tbsp of almond flour
  • 2 tbsp of coconut flour
  • 1 tbsp of baking powder
  • 2 plums
  • 2 eggs
  • 100 ml of coconut milk
  • 1 tsp of vanilla essence
  • Stevia powder or the sweetner of your choice (1/2 tsp)

  • Add the eggs to a bowl and whisk them

  • Add the coconut milk and vanilla

  • Sift the flour, stevia powder and baking powder and add them to the bowl

  • Mix it all together

  • Slice the plums and add them to the molds. You can also add them once you added the batter to the molds but I just like making my life more complicated 😊

  • Preheat the oven at max temperature and set it at 180ºC (356ºF)
  • Bake for 30 minutes aproximately. A trick to check if it’s done: you can use a toothpick. Insert a wooden toothpick near the center of the cupcake. It’s done when the toothpick comes out clean.
