This recipe only needs 3 ingredients: chickpeas, olive oil and spices. The chickpeas are known for being a great source of plant based protein, with 19 grams of protein for each 100 grams of chickpeas. The olive oil ads the healthy fats, while the spices give them a delightful taste. The process is as simple as the ingredients, it only takes 5 minutes to mix the ingredients and toss them into the air fryer or oven, and wait for it to hit perfection.

These roasted chickpeas provide similar nutritional values as any kind of nut. Furthermore, this is a cheaper and lower in calories option.

For this recipe, you can either remove the skin or leave it as it is. After baking, the crunchiness of the skin combined with the spices is delicious.

How to make these crunchy roasted chickpeas

Ingredients (5 to 6 servings):

  • 400 grams of canned chickpeas
  • 1 tbsp of olive oil
  • 1/2 tsp of ground cumin, paprika powder, garlic powder, coriander powder
  • Salt and pepper

Instructions:

  • Rinse the chickpeas in a strainer

Note: You can either buy the canned chickpeas or cook them yourself. You need to soak them in water for 8 hours or overnight, rinse them and add them to a large pot with water. Bring them to boil and reduce the heat. Simmer for 1 to one and a half hours. One tip is to cook them al dente, this way you’ll get a crispier texture at the end.

  • Preheat your air fryer at maximum temperature
  • Place them in the air fryer basket and bake for 20 minutes at 180ºC (356ºF)
  • Oven: place them over a baking sheet and bake for 20 to 30 minutes at 200º C (392ºF) or until golden
  • Don’t forget to stir or shake them at least 2 times
  • Done! Let them cool for 10 to 15 minutes and they are ready to be served!

Done! Enjoy this crunchy roasted chickpeas. You can eat them on their own as a snack or use them as a topping for your veggie cream soups.
