Banana pancakes with oat and coconut flour

These banana pancakes are absolutely delicious. I could eat them every single morning. And the best thing is that it doesn’t take more than 15 minutes to prepare them. You only need a mixer and a pan (and the ingredients I’m going to list below of course).

I’m not lying when I say that these are my favourite pancakes. They are sugar free, gluten free, lactose free; and the combination of oat and coconut flour gives them the perfect taste and texture.

Before we get into the recipe, I would like to give you some previous tips that will help you get out the most of this recipe:

  • Use a ripe banana. The riper the banana, the sweeter the pancakes will be.
  • Little tip that may seem obvious but Andrea from the past didn’t know it: Make sure that the pan is preheated before you pour in the mixture. It may take 1 min or 2 depending on the stove. You know it’s ready when you touch it and burn your finger tip (joking …. mostly). Otherwise the pancakes won’t get that brown-ish colour and probably won’t be completely cooked inside.
  • If you don’t have a blender, just mix all the ingredients in a bowl. In that case you need to use oat flour instead of rolled oats.
  • Cover the pan after you pour in the batter portions and let it uncovered after you turned them over. This will give them a thick and fluffy texture.
  • For a vegan version, remove the egg and the tablespoon of water. You should get a thicker batter.

So without further ado, let’s jump right into the recipe:

  • Ingredients:
  • 1 egg
  • 1 banana
  • 1/3 cup of rolled oats
  • 1 tbsp of coconut flour
  • 1/3 cup of plant milk
  • 1 tbsp of water
  • 1 tbsp of ground flax seeds
  • Cinnamon

Instructions:

  1. Add all the ingredientes to a blender (save a piece of banana for the topping).
  2. Blend until smooth
  3. Heat the pan over medium heat.
  4. Add a tsp of coconut oil
  5. Pour 1/4 portions of the batter into the pan. Add 2 or 3 blue berries on top. Cover the pan.
  6. After 2 or 3 min (or when little bubbles start forming over the top), flip them over.
  7. Wait another 1 or 2 minutes.
  8. Repeat with the rest of the batter.

Now it’s time to put them into a plate and decorate with the toppings.
